Rustic Wedding Layout

This is another 8x8 scrap page, I'm really liking this size!

This is my friend Jacylyn at her wedding
rustic heart made by crumpling up the paper then sanding the creases.

Made a cute little garland with 1" circles folded over Hemp Twine.

Greek Yogurt Pops!

Want a healthier version of icecream?  Make some Greek Yogurt Pops! Super easy and fun for kids too! I found this adorable popsicle mold at Winners, they actually look like icecream cones!



First you'll need some greek yogurt, any flavour you'd like. My faves are Honey from Presidents Choice (which I used here), or Liberte Passionfruit or Strawberry. Both are 0%MF and sooooooo thick and creamy!!

 
 Next you'll need to add a bit of sweetness with honey or agave nectar. Then add your fave fresh or frozen fruits, here I added some blueberries. Then fill your molds and freeze!

 ENJOY!!

Fresh Corn Salad

This salad is absolutely AMAZING!! Great for a BBQ or anytime!  You have to use fresh corn, just has so much more taste and freshness.

 
I saw this on Pinterest, but didn't bother to make the dressing exact, cause my boyfriend doesn't like alot of dressing on his food, so I just used fresh lime juice, salt and pepper, and a bit of rice vinegar. The avocados add their own creaminess to it, you don't need to add oil! So much healthier! Plus I omitted the cilantro cause I'm not a fan, but it would be great in this salad if you like it.

First start with roasting your corn in the oven, husks and all!!! This is an easy way to cook your corn instead of boiling it.


  Keeping the husks on basically steams the corn inside, and makes it 10x easier to peel off afterwards. Plus your kitchen will smell like fresh corn, so yummy!!


While your corn is roasting (20 mins or less if you want more crunchiness which I do!)...finely dice all your other ingredients. Red pepper, red onion, fresh jalapeno, avocado and yellow pepper. I squeezed a bit of lime juice on the avocado to keep from browning while the corn was finishing.



Once the corn is done, peel it and then de-cob it!! Easiest way to not make a mess, or slip and cut yourself is to stand the cob up inside your bowl of veggies and run your knife downwards and the bowl catches it all!


Then just finish off with 1 lime juiced, salt and pepper, a couple splashes of rice vinegar and mix well! Easy!  Also added some crumbled Feta cheese!

I served this with my handmade Sweet Potato Bean Burgers, what a great dinner! Check yesterdays blog post for instructions on those 'burgers'!

Sweet Potato Bean Burgers

This long weekend I decided to make a few new recipes I found off of Pinterest. I made these Sweet Potato Bean Burgers!! Delish!



  But being a cook by profession, I never really follow recipes exactly, except in baking of course. I changed up the whole wheat flour in the original recipe and used Stone-ground Black Bean Flour, thought it would add more fibre and protein. So I decided I'd do a little step by step with photos if anyone wanted to try these. The were good, but I recently found a different recipe using chick peas instead of beans, so I think I would like those even better.

This is an easy recipe! You just need a large sweet potato, 1 can of Cannellini beans (white kidney beans), Tahini (pureed sesame seeds) and flour for binding ( I used the black bean flour)  as well as seasonings like salt and pepper, cajun spice or lemon pepper, anything you like really!!


the recipe says to bake your sweet potato, but to save time, I peeled and sliced mine then threw it in the oven til tender, probably 15-20 mins. Alot quicker! 
Then open your can of beans, rinse really well, and mash them with your baked sweet potatoes

 season and add enough flour to bind it so you can form patties.
Next coat the outside with Panko bread crumbs seasoned with whatever you'd like, I added Cajun spice. Then heat up a frying pan with oil and pan fry til golden.

Top it with your choice, I used avocado, red onion, hummus and sriacha mayo, on a whole grain bun. Delish! I paired this with a fresh corn salad which I will share with you all tomorrow!!


Can you believe it's been about 3 months that I've been 'vegetarian'? I completely cut out beef, pork, chicken, but will eat seafood, and occasionally fish, mostly just shrimp. I used to LOVE pork products like sausage, bacon, deli meats...etc...but have not touched them at all! Don't get me wrong, I see those delicious breakfast sausages or bacon at work daily, and I do have urges, but I have not given in to them!

Autumn Days Scrap Layout

I know it's not even summer yet, but I had this photo from last fall, and couldn't resist scrapping it when I got the Well Worn Designer Paper from Stampin' Up! I thought the colours matched perfectly with my scarf and blue sky in the photo.

 This is an 8x8 scrap page. I been wanting to do a smaller scrap book, sometimes filling a 12x12 page is hard.

I cut out a few leaf images from the French Foliage stamp set on First Edition DSP. Added a bow with crinkled seam binding ribbon (used starch spray) and a mini safety pin, all from SU! The letter stickers are from Prima.


Well since it isn't Autumn just yet, here's a photo of what my lilacs look like on my street....a few more days and there will be a sweet smell in the air!! Open my windows, and free air freshener!

You're My Type

I know, I know, it's been a LONG time since I've posted! The truth is I really haven't done much creating lately...but I finally had a few free hours after work yesterday to clean off my desk and get my creative juices flowing again! I pumped out 3 cards...a birthday, mother's day, and just because. I'll share my masculine birthday card today, you'll just have to check back later for the others.

I got this stamp set awhile ago, but just opened it last night. I love the vintage feel to the old typewriter, plus all the cute sayings it comes with!

I made this for my Gramps, even though it's 2 months late (oops)  I know he'll enjoy receiving it in the mail.



While I was working on another card for my Gran, I had a little helper join me....Lola!
